Ingredients
2 cups canned crushed tomatoes
1 cup vegetable broth
1/2 cup heavy cream
1 medium onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried basil
Salt and pepper to taste
4 slices of bread
4 slices of cheddar cheese
2 tablespoons butter
Instructions
In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until soft and translucent, about 5 minutes.
Add the crushed tomatoes, vegetable broth, dried basil, salt, and pepper. Stir well and bring to a simmer. Cook for about 15 minutes.
Stir in the heavy cream and cook for an additional 5 minutes. Use an immersion blender to blend the soup until smooth, or leave it chunky if preferred.
Meanwhile, heat a skillet over medium heat and butter one side of each slice of bread.
Place two slices of bread, butter-side down, on the skillet. Top each with two slices of cheddar cheese. Cover with the remaining slices of bread, butter-side up.
Cook the sandwiches for 3-4 minutes on each side, or until golden brown and the cheese has melted.
Serve the hot soup in bowls alongside the grilled cheese sandwiches, sliced in half for easy dipping.
