Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 large potato, peeled and cubed
  • 1 can (14 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat and add the diced onion, cooking until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the diced carrots and celery to the pot, sautéing for 5-7 minutes until they begin to soften. Then, add the cubed potato and cook for another 3 minutes.
  3. Stir in the can of diced tomatoes along with their juices, vegetable broth, dried thyme, dried rosemary, and bay leaf. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20 minutes.
  4. Add the chopped kale to the pot and simmer for another 10 minutes until the kale is tender. Season the soup with salt and pepper to taste.
  5. Remove the bay leaf and stir in the lemon juice for a bright finish. Adjust seasoning if necessary.
  6. Ladle the hot soup into bowls and garnish with freshly chopped parsley before serving. Enjoy your cozy winter soup!
