1 lb boneless, skinless chicken breasts, sliced
2 bell peppers (red and green), sliced
1 medium onion, sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
8 small flour tortillas
1 cup shredded cheese (cheddar or Mexican blend)
Sour cream and salsa for serving
Fresh cilantro for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss until everything is well coated.
Spread the chicken and vegetable mixture evenly on a large baking sheet.
