Delicious Sinigang na Baboy: A Classic Filipino Pork Soup

2 lbs pork belly, cut into cubes
8 cups water
1 large onion, quartered
2 medium tomatoes, quartered
1 radish (labanos), sliced
1 cup tamarind paste or 1 cup fresh tamarind pods
2 green chili peppers (siling pangsigang)
1 cup water spinach (kangkong)
1 cup string beans (sitaw), cut into 2-inch pieces
Salt, to taste
Pepper, to taste
1 tablespoon fish sauce (patis)
Instructions
In a large pot, combine the pork belly and water. Bring to a boil over medium heat.
Skim off any scum that rises to the surface, then add the onion and tomatoes. Let it simmer for about 30 minutes until the pork is tender.
If using fresh tamarind pods, boil them in a separate pot with a bit of water for about 10 minutes, then mash and strain to extract the juice. Add the extracted tamarind juice to the pork pot.
If using tamarind paste, stir it into the pot directly after 30 minutes of cooking.
Add the radish, string beans, and green chili peppers. Continue to simmer for another 10-15 minutes until the vegetables are tender.
Stir in the water spinach and cook for an additional 2 minutes. Season with salt, pepper, and fish sauce to taste.
