  1. In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
  2. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add diced chicken, garlic powder, paprika, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 7-10 minutes.
  3. Add broccoli florets to the skillet and sauté for an additional 5 minutes until tender.
  4. In a large bowl, combine the cooked quinoa, chicken and broccoli mixture, black beans, and cherry tomatoes. Toss gently to combine.
  5. Drizzle lime juice over the mixture and add diced avocado. Gently mix to avoid mashing the avocado.
  6. Divide the meal prep mixture into 4 containers and garnish with fresh cilantro. Store in the refrigerator for up to 5 days.
