  1. In a large pot, heat the vegetable oil over medium heat. Add the pork belly and brown on all sides.
  2. Add the water, onion, and tomatoes to the pot. Bring to a boil and then reduce to a simmer. Skim off any foam that forms on the surface.
  3. Simmer the pork for about 45 minutes or until tender. Add more water if necessary.
  4. Once the pork is tender, add the radish, green beans, and eggplant. Cook for another 10-15 minutes until the vegetables are tender.
  5. Stir in the tamarind paste (or fresh tamarind) and fish sauce. Adjust the seasoning with salt to taste.
  6. Add the green chili peppers and spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Remove from heat and serve hot with steamed rice.
