Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • Salt and pepper to taste
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large bowl, combine the sliced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper, tossing well to coat evenly.
  2. Heat a large skillet over medium-high heat and add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
  3. Add the sliced bell peppers and onion to the skillet, continuing to cook for another 5-7 minutes until the vegetables are softened and slightly charred.
  4. While the chicken and vegetables are cooking, warm the flour tortillas in a separate pan over low heat for about 1-2 minutes on each side until pliable.
  5. Once the chicken and veggies are ready, remove the skillet from the heat and sprinkle shredded cheese on top, allowing it to melt.
  6. To serve, spoon the chicken fajita mixture onto warm tortillas, adding avocado slices, fresh cilantro, and lime wedges as desired.
