Sinigang na Baboy: A Traditional Filipino Pork Soup

  1. In a large pot, heat the vegetable oil over medium heat. Sauté the onion and tomatoes until the onion is translucent and the tomatoes are soft.
  2. Add the pork chunks to the pot and cook until they are browned on all sides.
  3. Pour in 8 cups of water and bring to a boil. Skim off any scum that rises to the surface.
  4. Add the tamarind pulp or sinigang mix, fish sauce, and green chili peppers. Lower the heat and let it simmer for about 45 minutes to 1 hour, or until the pork is tender.
  5. Stir in the radish and eggplant, and cook for an additional 10 minutes.
  6. Finally, add the water spinach and cook for another 2-3 minutes. Adjust seasoning with salt and pepper to taste.
  7. Serve hot with steamed rice.
