Ingredients
12 oz spaghetti
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, sliced
1 can (14.5 oz) diced tomatoes, with juice
3 cups vegetable broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup spinach leaves
1/2 cup grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
Stir in the minced garlic, bell pepper, and zucchini. Cook for another 3-4 minutes until the vegetables are slightly tender.
Add the spaghetti, diced tomatoes (with juice), vegetable broth, Italian seasoning, salt, and pepper to the pan. Bring to a boil.
Reduce the heat to low, cover the pan, and simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked al dente and most of the liquid is absorbed.
Stir in the spinach leaves and cook for another 2-3 minutes until wilted.
Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
