Delicious Pork Adobo Recipe for Authentic Filipino Flavor

Experience the rich and savory taste of this classic Pork Adobo Recipe, a beloved Filipino dish made with tender pork marinated in a savory mix of soy...

Ingredients

  • 2 pounds pork shoulder, cut into chunks
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 onion, sliced
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • 1 cup water
  • 2 green onions, chopped (for garnish)
  • Salt to taste

Instructions

  1. In a bowl, combine the pork chunks with soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Marinate for at least 30 minutes or overnight in the refrigerator for deeper flavor.
  2. Heat the vegetable oil in a large pot over medium heat. Remove the pork from the marinade (save the marinade) and brown the pork pieces on all sides, about 5-7 minutes.
  3. Pour the reserved marinade and water into the pot with the browned pork. Stir in the brown sugar and add salt to taste.
  4. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1 hour or until the pork is tender. Stir occasionally and add more water if needed.
  5. Once the pork is tender, uncover the pot and increase the heat to medium-high. Let the sauce reduce for about 10-15 minutes until it thickens slightly.
  6. Taste and adjust seasoning if necessary. Serve the pork adobo hot, garnished with chopped green onions over steamed rice.
