  1. In a large pot, boil the water and add the pork belly. Simmer for about 30 minutes, skimming off any foam that rises to the surface.
  2. Add the quartered onion and tomatoes to the pot. Cook for another 10 minutes until the vegetables are softened.
  3. Stir in the radish and cook for 5 minutes, followed by the long green beans and eggplant. Let everything simmer for an additional 5-7 minutes.
  4. Add the tamarind paste or fresh tamarind, along with the fish sauce. Adjust the sourness according to your taste preference.
  5. In the last few minutes of cooking, add the spinach and green chilies. Cook until the spinach is wilted.
  6. Season with salt and pepper to taste. Serve hot with steamed rice.
