Ingredients

  • 2 lbs pork belly, cut into cubes
  • 8 cups water
  • 1 medium onion, quartered
  • 2 medium tomatoes, quartered
  • 1 radish (labanos), sliced
  • 1 cup green beans (sitaw), trimmed
  • 1 cup water spinach (kangkong)
  • 2-3 green chili peppers (siling haba)
  • 1/4 cup tamarind paste or 1 cup fresh tamarind
  • 2 tablespoons fish sauce (patis)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, combine pork belly and water. Bring to a boil over medium heat, skimming off any foam that rises to the surface.
  2. Add the quartered onion and tomatoes to the pot. Lower the heat and simmer for about 45 minutes or until the pork is tender.
  3. Stir in the sliced radish and cook for another 5 minutes until it begins to soften.
  4. Add the green beans and cook for an additional 3-4 minutes.
  5. Mix in the tamarind paste (or fresh tamarind) and fish sauce. Adjust the sourness and saltiness to your preference.
  6. Finally, add the green chili peppers and water spinach. Cook for another 2 minutes until the spinach is wilted.
  7. Taste and adjust seasoning with salt and pepper if necessary, then remove from heat.
  8. Serve hot with steamed rice.
