2 lbs chicken thighs, bone-in and skin-on
1/2 cup soy sauce
1/2 cup white vinegar
1/4 cup water
6 cloves garlic, minced
3 bay leaves
1 teaspoon black peppercorns
1 tablespoon brown sugar
1 tablespoon vegetable oil
1 onion, sliced
1 teaspoon salt
1 tablespoon chopped green onions (for garnish)
1 red chili (optional, for heat)
Instructions
In a large bowl, combine the chicken, soy sauce, and minced garlic. Marinate for at least 30 minutes or overnight in the refrigerator for best flavor.
Add the marinated chicken (reserve the marinade) and brown on all sides for about 5-7 minutes.
Pour in the reserved marinade, vinegar, water, bay leaves, black peppercorns, and brown sugar. Do not stir immediately; let it boil for about 2-3 minutes.
Reduce the heat to low, cover, and let it simmer for 30-40 minutes until the chicken is tender and the sauce has thickened. Stir occasionally.
Taste and adjust seasoning with salt or more sugar as needed. If desired, add a red chili for some heat.
Serve hot over steamed rice, garnished with chopped green onions.
