A protein-packed dish featuring grilled chicken served with a zesty avocado salsa over quinoa, perfect for those seeking a low-carb and high-protein meal.

Ingredients

  • 12 oz chicken breast, boneless and skinless
  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • 2 avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the chili powder, garlic powder, onion powder, salt, and pepper. Rub this mixture over the chicken breasts.
  3. In a pot, bring the quinoa and water or chicken broth to a boil. Reduce heat to low, cover, and simmer for 15 minutes until all the liquid is absorbed. Fluff with a fork.
  4. While the quinoa is cooking, grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest for a few minutes.
  5. In a separate bowl, prepare the avocado salsa by combining diced avocados, cherry tomatoes, red onion, lime juice, and chopped cilantro. Season with salt and pepper to taste.
  6. Slice the grilled chicken and serve over a bed of quinoa topped with the avocado salsa.
