Ingredients

  • 200g dried Sichuan noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1 tablespoon Sichuan peppercorns (optional)
  • 2 green onions, chopped
  • Sesame seeds for garnish (optional)
  • Water for boiling

Instructions

  1. Bring a large pot of water to a boil and cook the dried Sichuan noodles according to package instructions, usually about 6-8 minutes, until al dente. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat, then add the minced garlic and ginger, stirring for 1-2 minutes until fragrant.
  3. Add the julienned carrot, sliced bell pepper, and broccoli florets to the skillet, sautéing for 3-4 minutes until the vegetables are tender but still crisp.
  4. In a small bowl, mix together the soy sauce, hoisin sauce, sugar, and Sichuan peppercorns if using. Pour this sauce over the sautéed vegetables and stir well to combine.
  5. Add the cooked noodles to the skillet, tossing gently to coat them with the sauce and vegetable mix. Cook for an additional 2-3 minutes until everything is heated through.
  6. Remove from heat and sprinkle the chopped green onions over the noodles. Serve hot, garnished with sesame seeds if desired.
