Ingredients
2 lbs pork belly, cut into chunks
8 cups water
2 medium tomatoes, quartered
1 onion, quartered
2 radishes, sliced
1 cup green beans, trimmed
1 cup eggplant, sliced
2 cups water spinach (kangkong)
1/4 cup tamarind paste or fresh tamarind
2-3 green chili peppers
Salt to taste
Fish sauce to taste
1 tablespoon vegetable oil
Instructions
In a large pot, heat the vegetable oil over medium heat. Add the pork belly and cook until browned on all sides.
Add the quartered tomatoes and onion to the pot. Sauté until the tomatoes are soft and the onion is translucent.
Pour in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 30 minutes, skimming off any foam that rises to the surface.
After 30 minutes, add the tamarind paste (or fresh tamarind) and continue to simmer for another 10 minutes, allowing the broth to become tangy.
Stir in the radishes, green beans, and eggplant, cooking for an additional 5-7 minutes until the vegetables are tender.
Add the water spinach and green chili peppers, cooking just until the spinach wilts, about 2-3 minutes.
Season with salt and fish sauce to taste. Adjust the sourness by adding more tamarind if desired.
