Ingredients

  • 1 pound chicken breast, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • 1 cup corn, drained (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the diced chicken breast with olive oil, cumin, paprika, salt, and pepper until evenly coated. Spread the chicken on the prepared baking sheet.
  3. Roast the chicken in the oven for 20-25 minutes or until it reaches an internal temperature of 165°F (75°C).
  4. While the chicken is cooking, bring 2 cups of vegetable broth to a boil in a medium saucepan. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy.
  5. In a large skillet over medium heat, add the chopped bell peppers and broccoli florets. Sauté them for about 5-7 minutes until they are tender-crisp.
  6. Once the chicken is cooked, combine it with the sautéed vegetables, black beans, corn (if using), and lime juice in a large mixing bowl. Stir gently to combine all ingredients.
