Ingredients

  • 2 lbs pork belly, cut into chunks
  • 8 cups water
  • 1 medium onion, quartered
  • 2 medium tomatoes, chopped
  • 1 radish (labanos), sliced
  • 1 cup long green beans (sitaw), trimmed
  • 1 cup water spinach (kangkong)
  • 2-3 green chili peppers (siling pangsigang)
  • 1 packet (40g) sinigang mix (or 2-3 tamarind pods)
  • 2 tablespoons fish sauce (patis)
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the pork belly and water, then bring to a boil over medium-high heat. Skim off any foam that rises to the surface.
  2. Once boiling, add the quartered onion and chopped tomatoes to the pot. Lower the heat and let it simmer for about 45 minutes or until the pork is tender.
  3. Add the sliced radish and continue simmering for another 5-10 minutes until the radish is slightly soft.
  4. Stir in the long green beans and green chili peppers, then cook for another 5 minutes until the beans are tender yet crisp.
  5. Mix in the sinigang mix or tamarind pulp, stirring well to dissolve and incorporate the sour flavor into the broth.
  6. Add the water spinach last, and let it cook for an additional 2-3 minutes until wilted. Season with fish sauce, salt, and pepper to taste.
  7. Remove from heat and serve hot with steamed rice for a comforting meal.
