Ingredients
- 8 ounces flat rice stick noodles (sen lek)
- 1 pound beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 eggs, lightly beaten
- 3 tablespoons fish sauce
- 2 tablespoons tamarind paste
- 1 tablespoon sugar
- 1 cup bean sprouts
- 4 green onions, sliced
- 1/4 cup crushed peanuts
- 1 lime, cut into wedges
- Red chili flakes, to taste
Instructions
- Using a medium saucepan, bring water to a boil. Add the flat rice stick noodles and cook according to package instructions until al dente, about 5-7 minutes. Drain and rinse under cold water to stop cooking. Set aside.
- Using a 12-inch skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the thinly-sliced beef and sear for about 2-3 minutes until browned but not fully cooked. Remove and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and sauté for about 30 seconds until fragrant.
- Push the garlic to one side of the skillet, add the lightly beaten eggs, and scramble until just set. Then, mix with the garlic.
- Add the cooked flat rice stick noodles back to the skillet, along with fish sauce, tamarind paste, and sugar. Toss everything together until thoroughly coated and heated through.
- Stir in the seared beef and toss to combine. Add bean sprouts and green onions, stirring until just wilted, about 1 minute.
- Remove from heat. Serve the Pad Thai in a wide, shallow dinner plate, garnished with crushed peanuts and lime wedges on the side. Sprinkle with red chili flakes to taste.
