Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, zested and juiced
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish by lightly greasing it with cooking spray.
  2. Pat the chicken breasts dry with paper towels and place them in the prepared baking dish. Drizzle olive oil over the chicken and season with salt, black pepper, garlic powder, and onion powder, ensuring even coverage.
  3. In a small bowl, mix together the chopped parsley, thyme, lemon zest, lemon juice, chicken broth, butter, and Dijon mustard until well combined.
  4. Pour the lemon herb sauce evenly over the seasoned chicken breasts in the baking dish.
  5. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  6. Remove the chicken from the oven and let it rest for 5 minutes before slicing. Serve warm with the sauce drizzled over the top.
