1.5 lbs chicken thighs, boneless and skinless, cut into chunks
2 tablespoons vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1 inch ginger, grated
2 medium tomatoes, pureed
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon chili powder (adjust to taste)
Salt to taste
1/2 cup coconut milk
Fresh cilantro for garnish
Juice of 1 lemon
Instructions
Heat the vegetable oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add the chopped onions and sauté until they are golden brown, about 5-7 minutes.
Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
Add the pureed tomatoes and cook until the mixture thickens, about 10 minutes. Stir occasionally.
Mix in the coriander powder, turmeric powder, chili powder, and salt. Cook for another 2 minutes to toast the spices.
Add the chicken pieces to the pan, coating them well with the spice mixture. Cook until the chicken is browned on all sides, about 5-7 minutes.
Pour in the coconut milk, stirring to combine. Bring to a simmer, cover, and cook on low heat for 20 minutes until the chicken is fully cooked and tender.
Finish with garam masala and lemon juice, stirring well. Garnish with fresh cilantro before serving.
