2 ½ cups all-purpose flour

1 cup unsalted butter, chilled and diced
6 to 8 tablespoons ice water
6 to 8 medium apples, peeled, cored, and sliced
¾ cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons lemon juice
1 tablespoon butter, sliced
1 egg, beaten (for egg wash)
Instructions
In a large bowl, combine 2 ½ cups flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Stir in the ice water, a tablespoon at a time, until the mixture comes together. Divide dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat the oven to 425°F (220°C). Roll out one disc of dough to fit a 9-inch pie pan. Place the crust in the pan and trim excess dough.
In a large bowl, toss the sliced apples with ¾ cup sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Pour the apple mixture into the crust and dot with butter.
Roll out the second disc of dough and place over the apple filling. Seal and flute the edges, then cut slits in the top crust to allow steam to escape.
Brush the top crust with the beaten egg for a golden finish. Bake in the preheated oven for 15 minutes, then reduce heat to 350°F (175°C) and continue baking for 30-35 minutes until the apples are soft and the crust is golden brown.
Allow the pie to cool before slicing. Serve warm or at room temperature.
