Ingredients
12 oz penne pasta
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, chopped
1 can (14 oz) diced tomatoes, with juices
4 cups vegetable or chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1 cup spinach, fresh
1 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
In a large skillet or sauté pan, heat the olive oil over medium heat.
Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3 minutes.
Stir in the bell pepper and zucchini, cooking for another 3-4 minutes until they begin to soften.
Add the penne pasta, diced tomatoes (with juices), vegetable or chicken broth, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil.
Reduce heat to low and cover the pan, simmering for about 12-15 minutes or until the pasta is al dente and the liquid has mostly absorbed.
Stir in the fresh spinach and grated Parmesan cheese, mixing until the spinach wilts and the cheese is melted.
Remove from heat and let it sit for a couple of minutes before serving.
