Ingredients
1 pound of boneless, skinless chicken breast
2 cups of broccoli florets
1 cup of cherry tomatoes, halved
1 tablespoon of olive oil
2 cloves of garlic, minced
1 teaspoon of dried oregano
1 teaspoon of paprika
Salt and pepper to taste
1 cup of quinoa, rinsed
2 cups of vegetable broth
1 lemon, juiced
Fresh parsley, chopped for garnish
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper. Add the chicken breasts and coat them well in the marinade.
Place the marinated chicken on a baking sheet and surround it with broccoli florets and halved cherry tomatoes.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
While the chicken is baking, cook the quinoa. In a saucepan, bring 2 cups of vegetable broth to a boil, then add the rinsed quinoa. Reduce heat to low, cover, and simmer for 15 minutes.
Once the quinoa is cooked, fluff it with a fork and stir in the lemon juice.
Serve the baked chicken and vegetables over a bed of quinoa, garnished with fresh parsley.
