Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 170 g brown sugar, packed
  • 130 g granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon cornstarch
  • 1 cup dark chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. In a medium saucepan, melt the unsalted butter over medium heat. Continue to cook while stirring gently for 5-7 minutes until the butter turns a rich amber color and has a nutty aroma. Remove from heat and let cool slightly in a large mixing bowl (4-quart).
  2. Add the brown sugar and granulated sugar to the bowl with the brown butter and whisk until well combined and smooth, about 1-2 minutes.
  3. Whisk in the egg, egg yolk, and vanilla extract until fully incorporated.
  4. In a separate medium bowl (2-quart), combine flour, baking soda, sea salt, and cornstarch. Gradually add this mixture to the wet ingredients, stirring until just combined. Avoid overmixing.
  5. Fold in the dark chocolate chips, semi-sweet chocolate chips, and chopped walnuts (if using) with a rubber spatula until evenly distributed.
  6. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes (or up to overnight) to allow the flavors to meld and the dough to firm up.
  7. Preheat your oven to 350°F (175°C) and line an 18x13-inch half sheet pan with parchment paper.
  8. Using a tablespoon or cookie scoop, portion dough onto the prepared sheet pan, leaving space between each cookie to allow spreading. Sprinkle with a pinch of sea salt on top of each cookie.
  9. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown, and the center is still slightly soft. Allow to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
