Elevate your romantic evening with this delicious date night steak dinner, featuring perfectly seared steaks topped with a rich garlic herb butter....
Ingredients
- 2 ribeye steaks (1-inch thick)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 lemon, zested and juiced
- 2 cups asparagus, trimmed
- 1 cup cherry tomatoes, halved
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
Instructions
- Preheat your oven to 400°F (200°C) and heat a large oven-safe skillet over medium-high heat.
- While the skillet heats, season both sides of the ribeye steaks with salt and black pepper.
- Add the olive oil to the skillet, then sear the steaks for about 4 minutes on each side until a golden-brown crust forms.
- In a bowl, mix the softened butter with minced garlic, parsley, rosemary, thyme, lemon zest, and half the lemon juice until well combined.
- After searing, transfer the skillet to the preheated oven and cook the steaks for an additional 5-7 minutes for medium-rare, or until desired doneness.
- While the steaks are baking, toss the asparagus and cherry tomatoes in a bowl with balsamic vinegar, honey, salt, and pepper.
- Spread the vegetable mixture on a baking sheet and roast in the oven for about 10-12 minutes, until tender.
- Once the steaks are done, let them rest for 5 minutes before serving, then top each steak with a generous dollop of the garlic herb butter.
