Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup shredded cheese (optional)
  • 2 salted eggs, sliced
  • Banana leaves (for lining the baking pan)
  • Grated coconut (for topping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a round baking pan with banana leaves, allowing the leaves to hang over the sides for easy removal later.
  2. In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt, and whisk until well blended.
  3. In a separate bowl, whisk together the coconut milk, water, eggs, and melted butter until smooth, then gradually incorporate this mixture into the dry ingredients until no lumps remain.
  4. Pour half of the batter into the prepared baking pan and spread it evenly, then bake for 15 minutes until it starts to set.
  5. Remove the pan from the oven and layer the sliced salted eggs and shredded cheese on top of the partially baked batter, then pour the remaining batter over the toppings.
  6. Return the pan to the oven and bake for another 20-25 minutes, or until the bibingka is golden brown and a toothpick inserted into the center comes out clean.
  7. Once baked, let the bibingka cool for a few minutes before using the banana leaves to lift it out of the pan.
  8. Serve warm, topped with grated coconut if desired, and enjoy this delicious bibingka recipe!
