1 tablespoon sugar
1 cup unsalted butter, chilled and diced
6 to 8 tablespoons ice water
6 to 8 medium apples, peeled, cored, and sliced
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon butter, to dot
1 egg, beaten (for egg wash)
1 tablespoon milk (for egg wash)
Instructions
In a large bowl, mix together the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs.
Stir in enough ice water to form a dough. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 4 hours or overnight.
Preheat your oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place the rolled dough into the pie pan.
In another bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Pour the apple mixture into the prepared pie crust and dot with butter.
Roll out the second disc of dough and place it over the filling. Seal and flute the edges, then cut slits in the top to allow steam to escape.
Brush the top crust with the beaten egg mixed with milk for a golden finish. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes until the apples are soft and the crust is golden brown.
Cool on a wire rack before serving, allowing the filling to set.
