Warm up this season with our Hearty Pumpkin Soup, a fall comfort food recipe that combines the rich flavors of pumpkin and spices. Perfect for chilly...
Ingredients
- 2 cups pumpkin puree
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon maple syrup (optional)
- 1/4 cup chopped fresh parsley for garnish
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat, then add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, ground cinnamon, nutmeg, and ginger to the pot, stirring for 1-2 minutes until fragrant.
- Stir in the pumpkin puree and combine well with the onion and spices for an additional 2 minutes.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes to allow flavors to meld.
- Add 1 cup of coconut milk and stir until fully incorporated, then season with salt, pepper, and maple syrup if desired for a hint of sweetness.
- Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer to a countertop blender in batches.
- Serve the soup hot, garnished with fresh parsley for a pop of color and flavor.
