Ingredients
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) kidney beans, rinsed and drained
1 cup frozen corn
1 cup shredded cheddar cheese
1 cup cooked rice
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1 cup crushed tortilla chips
2 tablespoons olive oil
Fresh cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until soft.
Add ground beef to the skillet and cook until browned. Drain any excess fat.
Stir in diced tomatoes, kidney beans, corn, cooked rice, chili powder, cumin, salt, and pepper. Mix well and let simmer for 5 minutes.
Transfer the mixture to a greased 9x13 inch casserole dish. Top with shredded cheddar cheese and crushed tortilla chips.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.
