Ingredients
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C) and line an 18x13-inch half sheet pan with parchment paper.
- In a large mixing bowl (4-quart), mix 1 cup of creamy peanut butter, 1 cup of granulated sugar, and 1 cup of packed brown sugar until well combined.
- Add 1 large egg, 1 teaspoon of vanilla extract, 1 teaspoon of baking soda, and 1/4 teaspoon of salt to the peanut butter mixture. Stir until the ingredients are fully incorporated and the dough comes together.
- Gradually mix in 1 cup of all-purpose flour until fully incorporated.
- Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Using a fork, gently press down on each cookie to create a crisscross pattern on top, with each fork mark pressed about 1/4 inch apart.
- Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
