- 3-4 pounds pork shoulder
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 cup apple cider vinegar
- 1 cup BBQ sauce (your choice)
- 2 tablespoons brown sugar
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Buns for serving
- Coleslaw for topping (optional)
Instructions
- Preheat your oven to 300°F (150°C) and prepare a large roasting pan.
- In a large skillet, heat olive oil over medium heat, then add the diced onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
- Rub the pork shoulder with brown sugar, smoked paprika, cumin, chili powder, salt, black pepper, and cayenne pepper, ensuring it's evenly coated.
- Place the seasoned pork shoulder in the prepared roasting pan and pour the cooked onion and garlic mixture over it, followed by the apple cider vinegar and BBQ sauce.
- Cover the roasting pan tightly with foil and bake in the preheated oven for 4-5 hours, or until the pork is tender and easily shredded with a fork.
- Once cooked, remove the pork from the oven and let it rest for about 15 minutes before shredding with two forks, mixing in additional BBQ sauce if desired.
- Serve the pulled pork on buns, topped with coleslaw if you like, and enjoy!
