Raspberry Chocolate Chip Ice Cream

This luscious raspberry chocolate chip ice cream combines tart raspberries with rich chocolate chips, creating a stunning contrast that will delight...

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips
  • 6 large egg yolks

Instructions

  1. In a saucepan, heat the heavy cream, whole milk, and sugar over medium heat until steaming, about 5-7 minutes.
  2. In a blender, puree the raspberries until smooth. Strain through a fine-mesh sieve to remove seeds.
  3. In a bowl, whisk the egg yolks. Slowly add about 1 cup of the hot cream mixture to the yolks, whisking constantly to temper them.
  4. Return the yolk mixture to the saucepan and cook over low heat until thickened, about 10-15 minutes. Stir in the raspberry puree and cool the mixture to room temperature. Refrigerate until cold. Churn in your ice cream maker, adding the chocolate chips in the last few minutes.
