Ingredients
- 1 whole turkey (12-14 lbs)
- 1 cup unsalted butter, softened
- 2 cups celery, chopped
- 2 cups onion, chopped
- 1 cup carrots, chopped
- 12 cups bread cubes (stale or toasted)
- 2 tablespoons fresh sage, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 4 cups chicken broth
- Salt and pepper to taste
- 1 cup cranberry sauce (for serving)
- 1 cup gravy (for serving)
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 325°F (165°C) and prepare a roasting pan.
- In a large skillet, melt 1/2 cup of the butter over medium heat, then add the chopped celery, onion, and carrots. Sauté for about 5 minutes until softened, then remove from heat.
- In a large bowl, combine the sautéed vegetables, bread cubes, sage, thyme, rosemary, and chicken broth. Mix well and season with salt and pepper to taste.
- Pat the turkey dry with paper towels and rub the remaining butter all over the skin. Season the turkey generously with salt and pepper, both inside and out.
- Stuff the turkey cavity with the prepared stuffing and secure the legs with kitchen twine. Place the turkey breast side up in the roasting pan.
- Roast the turkey in the preheated oven for about 3 to 3.5 hours, basting every 30 minutes with pan juices, until the internal temperature reaches 165°F (75°C).
- While the turkey is roasting, toss the green beans with olive oil, salt, and pepper, and roast them on a separate baking sheet for the last 20 minutes of the turkey’s cooking time.
- Once the turkey is done, let it rest for 20-30 minutes before carving. Serve with cranberry sauce, gravy, and roasted green beans.
