  1. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
  3. Push the garlic and ginger to the side of the skillet and pour in the beaten eggs, scrambling them until fully cooked.
  4. Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until heated through.
  5. Add the cooked rice, soy sauce, and remaining sesame oil, mixing everything well and stir-frying for another 3-4 minutes.
  6. Season with salt and pepper to taste, and fold in the chopped green onions just before serving.
