Ingredients
- 2 lbs oxtail, cut into pieces
- 1/2 cup peanut butter
- 1/4 cup ground rice
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1/4 cup fish sauce
- 6 cups water
- 1 eggplant, sliced
- 1 cup green beans, trimmed
- 1 banana heart, sliced
- 1/2 cup bok choy, chopped
- Salt and pepper to taste
- Chili paste (optional, for serving)
Instructions
- In a large pot, combine the oxtail and water, then bring to a boil. Skim off any foam that rises to the surface.
- Add the chopped onion and minced garlic to the pot, then reduce the heat to a simmer. Cover and cook for about 2-2.5 hours, or until the oxtail is tender.
- Once the oxtail is tender, stir in the fish sauce and peanut butter until well combined.
- Sprinkle the ground rice into the pot gradually while stirring to thicken the sauce. Let it simmer for another 15 minutes.
- Add the sliced eggplant, green beans, and banana heart to the pot. Cook for an additional 10-15 minutes, or until the vegetables are tender.
- Finally, mix in the chopped bok choy, and season with salt and pepper to taste. Allow the dish to simmer for another 5 minutes before serving.
