Ingredients
- 2 ribeye steaks (8 oz each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup red wine (Merlot or Cabernet Sauvignon)
- 2 tablespoons unsalted butter
- 1 teaspoon fresh rosemary, chopped
- 2 large potatoes, peeled and cubed
- 1/4 cup heavy cream
- 2 tablespoons sour cream
- 1 bunch asparagus, trimmed
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
Instructions
- Season the ribeye steaks generously with salt and pepper on both sides.
- In a skillet, heat olive oil over medium-high heat. Add the steaks and cook for about 4-5 minutes on each side for medium-rare. Remove from the pan and let rest.
- In the same skillet, add red wine and bring to a simmer, scraping up any browned bits. Cook until reduced by half, about 5 minutes. Stir in butter and rosemary until melted and combined.
- While the steak rests, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash with heavy cream, sour cream, salt, and pepper to taste.
- In another pot, steam the asparagus until bright green and tender, about 5 minutes. Drizzle with lemon juice and sprinkle with garlic powder.
- Plate the mashed potatoes, top with the steak, and drizzle with the red wine reduction. Serve the asparagus on the side.
