Ingredients
- 2 ribeye steaks (1 inch thick)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 lemon, halved
- 1 pound asparagus, trimmed
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
Instructions
- Start by bringing the ribeye steaks to room temperature for about 30 minutes, then season both sides generously with salt and pepper.
- Heat the olive oil in a large skillet over high heat until shimmering. Carefully place the steaks in the skillet and sear for 3-4 minutes on each side for medium-rare, adjusting the time for your desired doneness.
- As the steaks cook, add the butter, minced garlic, rosemary, and thyme to the skillet. Tilt the pan slightly and use a spoon to baste the steaks with the melted garlic butter for extra flavor.
- Once the steaks are cooked to your liking, remove them from the skillet and let them rest on a cutting board for at least 5 minutes to retain their juices.
- While the steaks are resting, add the asparagus to the same skillet and sauté for 3-4 minutes until tender. Drizzle with balsamic vinegar and honey, tossing to coat evenly.
- To serve, place the rested steak on plates, top each with a dollop of garlic butter, and serve alongside the sautéed asparagus and lemon wedges for squeezing.
