Ingredients
2 cups cooked shredded chicken
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4 large flour tortillas
1/2 cup salsa
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Sour cream for serving (optional)
Chopped fresh cilantro for garnish (optional)
Instructions
In a large bowl, combine the cooked shredded chicken, cheddar cheese, mozzarella cheese, salsa, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
Heat a large skillet over medium heat and add olive oil.
Place one tortilla in the skillet and spread one-fourth of the chicken mixture on half of the tortilla.
Fold the tortilla over to cover the filling and cook for about 3-4 minutes, until the bottom is golden brown.
Carefully flip the quesadilla and cook for another 3-4 minutes on the other side until golden and the cheese has melted.
Remove from the skillet and let it cool slightly before cutting into wedges. Repeat with the remaining tortillas and filling.
Serve warm with sour cream and cilantro if desired.
