Ingredients

  • 4 whole wheat tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup chopped bell peppers (red, green, or yellow)
  • 1 cup fresh spinach leaves
  • 1 small zucchini, grated
  • 1/2 cup corn kernels (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Sour cream or yogurt for serving (optional)
  • Salsa for dipping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat, then add the chopped bell peppers, grated zucchini, and corn, cooking until they are tender, about 5 minutes.
  2. Stir in the fresh spinach leaves and cook for an additional 2 minutes until wilted, then season the mixture with garlic powder, onion powder, salt, and pepper.
  3. Remove the veggie mixture from the skillet and set it aside on a plate, wiping the skillet clean for the quesadillas.
  4. Place one tortilla in the skillet, sprinkle half of the shredded cheese evenly over it, then add half of the veggie mixture on top, followed by another sprinkle of cheese.
  5. Top with another tortilla and cook for about 3-4 minutes until the bottom is golden and crispy, then carefully flip and cook for an additional 3-4 minutes on the other side.
  6. Remove the quesadilla from the skillet and let it cool slightly before cutting it into wedges. Repeat the process with the remaining tortillas and filling.
  7. Serve the cheesy veggie quesadillas with sour cream or yogurt and salsa for dipping.
